Buckwheat Honey Sablé

Ingredients for app. 30 biscuitsPreparation time 25 minutes (excluding cooling and baking time)
150 g soft butter
50 g acacia honey
A pinch of salt
1 egg white
Grated zest of 1/2 an organic lemon
200 g buckwheat flour
1. Using the whisky of an electric hand mixer, beat butter and honey until foamy. Add salt, egg white and lemon zest. knead in buckwheat flour. Roll dough into 3 cm thick rolls, cover with cling film and chill for at least 2 hours.
2. Cut rolls into ?? cm thick slices, spread onto 2 baking trays lined with parchment paper leaving room between the pieces.
3. Bake in a preheated oven at 170 degrees for 10 minutes (convection oven 150 degrees).
