Apple with Goat Cheese and Curry Almonds

Serves 445 minutes
1 egg white
1 teaspoon curry
2 teaspoons turmeric
1/2 teaspoon coarse sea salt
75 g whole almonds (blanched)
3 apples
4 tablespoons lemon juice
2 tablespoons olive oil
2 sprigs of thyme
150 g goat cheese roll
For the curry almonds, beat egg whites with whisk until stiff. Stir in turmeric and curry. Mix almonds with egg whites. Spread almonds onto a baking tray lined with parchment paper. Sprinkle with salt.
Bake for 10 minutes at 180 degrees in pre-heated oven (gas stove level 2-3, convection oven 160 degrees). Remove from oven and let cool.
Remove core from apples with an apple corer. Cut apples into 2 cm thick slices. Immediately rub each slice with lemon juice on both sides. Pluck thyme leaves from sprigs. Heat oil in a non-stick frying pan, then fry both sides of apple slices and thyme.
Crumble goat cheese into medium-sized pieces.
Spread apple slices onto baking tray and top with goat cheese pieces. Sprinkle with salt and pepper. Cook under oven grill for 3-5 minutes. Top with spiced almonds.
