Vegan Avocado Mousse au Chocolat with Orange Salad and Almond Flakes

2 oranges
3 soft avocados, peeled and pit removed
6 tablespoons agave concentrated juice
100 ml soy cooking cream
3 tablespoons cocoa powder
2 tablespoons white almond butter
2 tablespoons almond liqueur
30 g almond flakes
1. Finely grate the zest of ½ an orange. Cut avocados in half, remove pit and remove peel from fruit flesh. Put into a tall container. Add 4 tablespoons agave juice, soy cream, cocoa powder and orange zest. Purée well. Chill for at least 3 hours.
2. Peel oranges. Remove orange membrane with a knife, extract fruit flesh and press out juice. Stir orange juice with almond butter, almond liqueur and 2 tablespoons agave juice. Mix in orange filets. Roast almond flakes in a non-greased pan. Fill the avocado mousse au chocolat into 4 glasses. Serve with orange salad and the roasted almond flakes.
